Chicken Basil Stir-Fry with Fried Egg

Ingredients
- 200g diced chicken
- 1 handful holy basil
- 1 tbsp pounded chili + garlic
- 1 tbsp oyster sauce
- 1 tsp light soy sauce
- 1/2 tsp sugar
- 1 egg
Method
- Fry an egg with crispy edges; set aside
- Fry chili-garlic until fragrant; add chicken and cook through
- Season with oyster sauce, soy and sugar over high heat
- Turn off heat, add basil, toss gently; serve over rice with the fried egg
How to choose ingredients
Choose fresh pinkish-white chicken, not slimy, no smell. Breast is leaner, thigh juicier pick to taste. Basil with tender stems.

Marinate chicken in a little soy for 5 minutes before frying for juicier meat; fry the egg in plenty of hot oil for crispy edges.
