Stir-Fried Crab in Yellow Curry

Ingredients
- 1-2 crabs
- 1 tbsp curry powder
- 2 eggs
- 1/4 cup milk/evaporated milk
- onion, spring onion
- oyster sauce, sugar, pepper
Method
- Steam or blanch crab until just cooked; crack into pieces (or use fresh, halved crab)
- Fry onion, add curry powder and cook in oil until fragrant
- Add crab; season with oyster sauce, sugar and milk
- Crack in eggs and fold gently into soft curds; add spring onion and serve
