- 3-4 kaffir lime leaves, torn
- fish sauce and sugar to taste
- oil for stir-frying
Method
- Heat oil and fry the curry paste until fragrant
- Add the pork and stir-fry until cooked
- Add the yardlong beans and stir-fry until crisp-tender
- Season with fish sauce and sugar, add kaffir lime leaves, toss and turn off the heat
How to Choose
Choose fresh pink pork with no smell · bright-green firm yardlong beans, not wilted · fragrant green kaffir lime leaves.
Chef's Secret
Secret: fry the curry paste in oil over medium heat until fragrant before adding the pork, so the aroma pops; add the beans later and stir quickly to keep them crisp; tear the kaffir lime leaves in at the end for fragrance.
