Ingredients
- 3 eggs
- Water/stock, 1.5× the egg volume
- 100g chopped shrimp + minced pork
- Shiitake + diced carrot
- Light soy sauce + sliced spring onion
Method
- Beat eggs with stock and soy sauce; strain through a sieve for smoothness
- Put shrimp, pork, mushroom and carrot in a bowl; pour the egg over
- Steam over low-medium heat, lid slightly ajar, about 1215 minutes until set
- Scatter spring onion, steam 1 more minute, and serve warm
