How to Choose
Choose large fresh prawns with shiny firm shells, heads attached, bouncy flesh · mature aromatic ginger · glass noodles that stay clear and don't fall apart.
Chef's Secret
Secret: don't lift the lid too often trapped steam cooks the prawns juicy and lets the noodles fully absorb the sauce; a little fried pork fat or sesame oil adds aroma.
