Ingredients

  • 500g chicken wings/thighs
  • 1/2 cup crispy flour
  • 1 head garlic
  • marinade (soy, oyster sauce, pepper, coriander root)
  • oil

Method

  • Marinate chicken for 1 hour
  • Coat lightly in crispy flour; fry over medium heat until golden
  • Fry chopped garlic until golden and fragrant (not burnt)
  • Scatter fried garlic over the chicken; serve with rice

How to Choose

Choose fresh chicken with taut, pale skin, no smell; skin-on wings and thighs crisp up best · plump, firm garlic cloves.

Chef's Secret

Secret: fry over medium-high, cook through, rest, then double-fry for lasting crunch without greasiness; fried garlic is the soul of Hat Yai chicken.
