How to choose ingredients
Choose plump, brightly coloured oysters with a clean sea smell and firm shape · Fresh shellfish fries up sweet, not fishy.
Chef's secret
Chef's secret: fry on high heat and don't flip too soon let the batter edges set and crisp first, for a proper crunchy or suan · blending rice flour with tapioca starch gives the crisp-outside, soft-inside texture.
