- 2 tbsp fish sauce
- 2 tbsp palm sugar
- tamarind juice
- oil
Method
- Scale, clean, score and pat the fish dry; deep-fry until crisp all over
- Fry garlic and chili until fragrant
- Season with fish sauce, palm sugar and tamarind; simmer into a thick three-flavour sauce
- Pour over the crispy fish and serve hot
How to Choose
Choose fresh fish with clear eyes, red gills, flesh that springs back, firm shiny scales and no fishy smell.
Chef's Secret
Secret: pat the fish completely dry before frying no splatter and a crisper result; fry on medium-high until crisp throughout; sauce it just before serving to keep the crunch.
